Island Wings
Wings crispy and juicy, seasoned with our Island Spice
Ingredients
For the Wings
Approx. 750 g chicken wings
1 tbsp Island Spice
1 tbsp flour
1 tbsp baking powder
Salt
For the dressing
The liquid ingredients are estimates, the end result should be a thick sauce
2 tbsp ketchup
1 tsp tomato paste
4 tbsp grape juice
1 tbsp brown sugar
1 tsp Scotch Bonnet Chili Mash (optional)
1.5 tbsp Island Spice
1 tbsp soy sauce
2 cloves of garlic
3 tbsp butter
some Jamaica rum (optional)
preparation
Split the wings at the joint. Rub with Island Spice, salt, flour and baking powder. Place on a rack or baking sheet and bake in the oven for 40 minutes. If you use a baking sheet, the wings must be turned after 20 minutes.
Melt the butter in a pan, add the garlic and fry briefly. Be careful not to burn the garlic. Now stir in the remaining ingredients. This should create a liquid sauce. The more liquid the sauce, the thinner the layer on the wings, the thicker the sauce, the more intense the dressing will taste later.
Add the warm wings to the pan and stir frequently until all the wings are coated with the dressing.
