Imagine: the best of both worlds in one bite. Here, the Caribbean meets Europe, Kingston Harbour meets the Bosphorus.
Instead of classic flatbread, the Caribbean döner comes with fluffy coco bread with a delicate coconut flavor. It's filled with juicy jerk chicken, which I grilled on skewers using my favorite recipe. Add a crisp salad, a dollop of spicy jerk sauce, and you have what is probably the most delicious fusion of Turkish street food culture and Jamaican spice.
The secret, as always, lies in the jerk seasoning: This special blend brings the typical Caribbean kick that you simply can't forget.
A doner kebab that not only fills you up, but also conjures up a holiday feeling in your hand.
Ingredients for Coco Bread
500 g flour
1 packet of dry yeast (equivalent to 20 g of fresh yeast)
250-300 ml coconut milk from a Tetra Pak, not from a can.
1/2 tsp salt
3 tablespoons of sugar
A little butter for spreading
Ingredients for the doner kebab
600g boneless and skinless chicken thighs
Vegetables to taste: red onions, spring onions, iceberg lettuce, red cabbage, tomatoes, cucumbers, bell peppers
Spices
Jerk seasoning paste
Jerk Seasoning Spice Mix
Green Seasoning
Jerk sauce, and possibly other sauces to taste.
preparation
For the Coco bread, follow the instructions in the blog recipe here.
Rub the meat with jerk seasoning, green seasoning (and other Jamaican spices to taste) and marinate for at least 2 hours.
Cut red onions, spring onions, iceberg lettuce, bell peppers, and red cabbage into thin strips. Quarter tomatoes and slice cucumbers.
Arrange the charcoal in a circle in a kettle grill (this ensures the meat is grilled on all sides), and heat the grill. Skewer the meat onto a long skewer. I used a chicken rotisserie and an onion for this. The onion provides the necessary stability. Place the skewer(s) in the circle of coals and grill the meat for about 20 minutes. Brush the meat with a little jerk sauce while grilling.
Before serving: Cut the cocobread in half. Slice the meat off the spit like you would a doner kebab. Fill the cocobread with sauce, vegetables, and meat, and enjoy immediately.
A cold Red Stripe beer goes well with that.
