Mac-and-Cheese
Mac and cheese is not just a typical American dish. It is also very popular in the Caribbean and Jamaica and is an integral part of Jamaican cuisine. My recipe for mac and cheese is very simple. You only need a few ingredients. The important thing is that you use the right cheese. I like to use a mixture of cheddar and gouda.
Ingredients
300 g macaroni (short horn pasta)
400 g cheese (e.g. Cheddar and Gouda, mountain cheese or Emmental)
300 ml cream
1-2 onions
butter
Nutmeg, salt and pepper
preparation
Cook the pasta until al dente. In the meantime, fry the onions in butter until they are nicely browned and caramelized. Add the cream and bring to the boil briefly. Add half of the cheese to the cream and allow to melt. Season to taste with the spices. Add the pasta and sprinkle the remaining cheese on the pasta. Bake in the oven at 180 degrees for around 15 minutes until the cheese has melted and is lightly browned.
Jerk chicken goes well with this.
