Ingredients
Shrimp with head and shell
1 tbsp YARDIES Island Spice
1 tbsp YARDIES Smoky Scotch Bonnet (for a smoky note)
3 allspice berries , YARDIES Allspice , crushed in a mortar
1-2 chilies, depending on taste, e.g. Scotch Bonnet, Habanero or others
1-3 cloves of garlic (pressed)

1 sprig of thyme or 1 tsp fresh thyme
Salt and pepper to taste
approx. 100-150 ml vegetable or fish stock (broth), e.g. Grace Fish Tea Soup
Scotch Bonnet chili sauce, e.g., from Tropical Sun , or others, depending on taste.
a little oil
Red food coloring (optional)

preparation
Devein the shrimp, but do not remove the shell and head.
Mix all ingredients except the liquid and hot sauce with the shrimp and let marinate for 15 minutes. Heat oil in a pan. Add the shrimp and fry for a few minutes. Deglaze with the broth, ensuring the shrimp are just covered, and simmer for about 10 minutes. Season with hot sauce to taste.
Serve lukewarm.

How do you eat Jamaican pepper shrimp? Normally, the head and shell are left on. First, twist off the head, and then open the shell from the underside. Provide a small bowl of water with lemon so your guests can clean their hands. Of course, if it seems too much trouble, you can remove the shell and head before serving.
