Sweet potato waffles

Waffles don't always have to be sweet. And as a savory option, they not only look impressive but are also incredibly versatile. You can eat them as a vegetarian main course, topped with salad or tofu, with a creamy dip as finger food, or serve them as a side dish to meat dishes such as jerk chicken or ribs.

Ingredients:
250g sweet potatoes
3 eggs
150 g flour
1 tsp baking powder
50 g butter
10 g brown sugar
Spices to taste: salt, pepper, paprika, allspice, Scotch Bonnet chili powder

Preparation: Wash the sweet potatoes and cut them into several pieces. Drizzle with a little oil and bake in the oven for about 30-40 minutes until soft. Then peel and mash the potatoes.

Cream the butter with a mixer or food processor, then add the eggs, flour, baking powder, sweet potatoes, and spices. Mix until a firm dough forms.

Bake the waffles one after the other in a waffle iron.
