Sweet potato waffles hearty soul food recipe
Waffles don't always have to be sweet. And as a savoury version, they not only look great, but are also very versatile. You can eat them as a vegetarian main course, topped with salad or tofu, with a creamy dip as finger food in between meals or serve them as a side dish to meat dishes such as jerk chicken or ribs.
Ingredients:
250 g sweet potatoes
3 eggs
150 g flour
1 teaspoon Baking powder
50g butter
Spices as desired: salt, pepper, paprika, allspice, Scotch Bonnet chili powder
Preparation: Wash the sweet potatoes and cut them into several pieces. Drizzle with a little oil and cook in the oven for about 30-40 minutes until soft. Then peel and mash the potatoes.
Using a mixer or food processor, beat the butter until creamy, add the eggs, flour, baking powder, sweet potatoes and spices. Mix until a firm dough is formed.
Bake the waffles one after the other in a waffle iron.
