Grilling as if over pimento wood
In Jamaica, jerk is grilled over pimento wood. Since Jamaica doesn't export pimento wood, you can use soaked allspice berries as an alternative.
Application: Soak allspice in water for several minutes and then place it on the hot coals. This will give your jerk the same aroma as grilling over allspice wood.
