This sauce combines the fruity flavor of ripe papayas with an intense, sweet-and-sour balanced spiciness. It has a rather liquid consistency and is less sweet than you might expect. Instead, it provides a powerful, aromatic kick that elevates any dish to the next level.
Ideal for refining stews, curries, marinades, or sauces, or for adding extra spice right at the table if you like it really hot. It's less suitable as a dip, as the spiciness really comes through then.
