Grilling like over allspice wood
In Jamaica, jerk is grilled over allspice wood. Since Jamaica does not export allspice wood, you can alternatively use soaked allspice berries.
Application: Soak allspice in water for several minutes and then place it on hot coals. This will give your jerk the same aroma as grilling over allspice wood.
