Jollof Rice - Authentic African Rice

Jollof rice is traditionally served at large celebrations such as weddings, birthdays and family gatherings and is simply a must-have there.

Simple Jollof Rice Recipe

Ingredients
2 cups basmati rice
1 can chopped tomatoes
3 generous tablespoons tomato paste
1 large onion, finely chopped
2-3 cloves garlic, chopped
1 red bell pepper, diced
1 tbsp Jollof seasoning, e.g. from Africa's Finest
3 generous tablespoons vegetable oil
1 tsp thyme
2 tsp curry powder
2 bay leaves
1 tsp (or to taste) Jamaican Scotch Bonnet Sauce
Salt and pepper to taste

Preparation
Heat the oil in a large pot over medium-high heat and sauté the onions until soft and lightly golden brown. Add the tomato paste and roast for a few minutes until it darkens and develops a slightly sweet aroma. This step is crucial for the typical taste of African rice.

Add garlic and fry for a few seconds, not too long, as garlic can become bitter. Add the chopped tomatoes, bell pepper and bay leaves and fry everything together for a few more minutes. Then add the spices and Jollof seasoning and let the sauce simmer for a few minutes over medium heat so that the flavors combine. Remove the bay leaves from the pot and blend the ingredients into a delicious, thick Jollof sauce.

Add the uncooked rice to the sauce and mix thoroughly so that all the rice grains are coated with the tomato mixture. Now add enough liquid to just cover the rice. The water should be no more than 1 cm above the rice. Bring everything to a boil briefly and then reduce the heat to medium.

Place the lid on the pot, add a kitchen towel or baking paper over it to further seal the pot, and let the rice simmer gently until all the liquid has been absorbed. When no more water is visible, reduce the heat to low (1-2). Stir gently occasionally and let the rice rest for a few minutes at the end so that it becomes fluffy and aromatic. This process can take up to 30 minutes.
