Lemon Jerk Potatoes - Fried potatoes with a Caribbean twist

Ingredients
1 kg small potatoes with skin
1 tbsp Dunn's River Lemon Jerk Seasoning
1/2 bunch spring onions, finely sliced
1/4 bunch parsley
1 sprig rosemary
Olive oil
1 lemon

Preparation
Wash the potatoes, cook them until done, and let them cool. Wash and finely chop the parsley. Squeeze the lemon and grate some of the zest. Clean the spring onions and cut them into fine rings. Cut the potatoes in half. Season with Lemon Jerk seasoning and pepper. Heat some oil in a pan. Add the cooled, dry potatoes and fry until crispy. Add spring onions, rosemary, and some lemon juice and zest.

Finally, sprinkle the parsley over the potatoes, and top with some feta cheese or sour cream to taste. Jerk Chicken is a great accompaniment.
