The secret? The combination of fresh ingredients, fiery Scotch Bonnet chilies, and the right Jerk seasoning blend. And, of course, real allspice – Jamaica's national spice.
Fresh Ingredients
2–4 fresh Scotch Bonnet chilies; if no chilies are available: Scotch Bonnet Sauce e.g., from Tropical Sun
1 onion
1 bunch of spring onions
6 cloves of garlic
1 piece of ginger (approx. ½ thumb-sized)
1 orange (peeled) – alternatively, 100 ml orange juice
Spices
1 tbsp thyme
1 tbsp allspice – Buy YARDIES Allspice
1 tsp nutmeg (powdered or grated)
1 tsp salt
1 tbsp pepper

Liquid Ingredients
100 ml soy sauce
100 ml vinegar (preferably white wine vinegar)
50 ml oil
1 tbsp Grace Browning Sauce – Buy Grace Browning
alternatively 1 tbsp brown sugar
Preparation
Throw everything in the blender: Put all ingredients into a blender or food processor.
Purée: Blend until a thick, slightly coarse marinade forms.
Marinate: Rub your meat, fish, or tofu generously with the Wet Jerk Marinade and let it marinate in the refrigerator, preferably overnight.
Grill or fry: It tastes best over charcoal with a little smoke – that's real Jamaican Jerk!
