The best ingredients for wet jerk

Fresh ingredients
2-4 chilies (e.g. Scotch Bonnet or Habanero)
1 onion
1 bunch of spring onions
6 cloves of garlic
1 piece of ginger (about ½ thumb size)
1 orange (peeled) – alternatively 100 ml orange juice

Spices
1 tbsp thyme
1 tbsp allspice – buy YARDIES allspice
1 tsp nutmeg (powder or grated)
1 tsp salt
1 tbsp pepper
1 tbsp YARDIES Island Spice OR
1 tbsp YARDIES Smoky Scotch Bonnet

Liquid ingredients
100 ml soy sauce
100 ml vinegar (preferably white wine vinegar)
50 ml oil
1 tbsp Grace Browning Sauce – Buy Grace Browning
alternatively 1 tbsp brown sugar

preparation
Throw everything into the blender: Put all the ingredients into a blender or food processor.
Purée: Blend until a thick, slightly coarse marinade is formed.
Marinate: Generously rub your meat, fish or tofu with the wet jerk marinade and ideally let it marinate overnight in the refrigerator.
Grill or fry: It tastes best over charcoal with a little smoke – that's real Jamaican jerk!
