4 tomatoes
1 red onion
3 cloves of garlic
1 red bell pepper
YARDIES Smoky Scotch Bonnet Seasoning Blend,
4 tbsp YARDIES Reggae Ketchup
1 tbsp Spicy Rye's Hot Honey Pepper Sauce (or 1-2 tsp sugar)

preparation
Finely dice the vegetables. Sauté the bell peppers, onions, and garlic in a pan with a little oil. Add a splash of water and cook, covered, until the bell peppers are soft (about 10 minutes, depending on the size of the diced peppers). Add the tomatoes, seasoning mix, Spicy Rye's sauce, salt, and pepper. Continue cooking, covered, until the salsa has thickened. Serve lukewarm or cold as a dip or burger sauce. The salsa will keep for several days in the refrigerator.
