Ingredients for the dough
700g flour
350g butter - ice cold
1 tbsp curry powder e.g. YARDIES Jamaican Curry
1 tbsp turmeric
1 tsp salt
approx. 500ml ice water
Ingredients for the filling
700g ground beef
2-4 onions
2 carrots
1 bunch spring onions
6 cloves garlic
1 tbsp All Purpose Seasoning e.g. YARDIES Island Spice
1-2 tbsp Tropical Sun Brown Stew Marinade
1-2 tbsp Browning e.g. from Grace
approx. 250ml beef or vegetable broth
1/2 cup panko or breadcrumbs
Preparation
Knead all ingredients for the dough (with half of the butter) into a smooth dough and chill for approx. 1 hour. Place the other half of the butter in the freezer for 1 hour as well. During this time, prepare the filling.
Chop the vegetables. Fry the minced meat in a pan and gradually add the vegetables. Season with YARDIES Island Spice, Tropical Sun Brown Stew Marinade, and Browning. Add the beef broth and thicken with panko. Finally, lightly mash the filling with an immersion blender. The components of the filling should still be partially recognizable.
Roll out the dough into a rectangle. Grate the frozen butter into flakes on a four-sided grater. This works best when it is frozen, so it should be in the freezer. Place some of the butter flakes on the dough, fold the dough in half, and again place butter flakes on the dough. Continue this process until the dough is folded small and the butter is used up.
Roll out the dough again and cut out dough circles with a large cup, bowl, or similar. Place part of the ground beef mixture on one half of the dough circle, fold it together, and seal the edges with a fork.
Bake the patties in the oven at 220 degrees convection for approx. 20 minutes.
